Tuna cheese melts

Yield: 4 servings

 

  • 1 can (12 ounces) water-packed chunk tuna, drained
  • ½ cup finely chopped celery ½ cup finely chopped onion
  • ¼ cup nonfat mayonnaise
  • 3 tablespoons sweet pickle relish
  • Ground black pepper, to taste
  • 4 whole-wheat or oat-bran English muffins, split
  • 1 cup shredded reduced-fat cheese
  1. In a bowl, stir together the tuna, celery, onion, mayonnaise, relish, and pepper.
  2. Toast the muffins, and place them on a baking sheet, split side up. Spread about ¼ cup of tuna mixture on each half. Place under a pre-heated broiler for 3 minutes. Top each muffin half with 2 tablespoons of the cheese, and broil a minute or 2 longer, until the cheese is melted. Serve hot.
