Wheat-Free Breakfast Bread?M, E, W, P, S, N
3/4 cup oat flour
1¼ cups white rice flour
1 tablespoon xanthan gum
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon baking powder
1 cup applesauce
¾ cup sugar
3 tablespoons water, 3 tablespoons oil, 2 teaspoons bakingpowder, mixed together
½ cup milk-free, soy-free margarine, melted
½ cup raisins
- Preheat oven to 350°F. Grease 9x5-inch pan. Setaside.
-In large bowl, combine flours, xanthan gum, baking soda,cinnamon, and baking powder. Set aside.
-In medium bowl, combine applesauce; sugar; water, oil, andbaking powder mixture; and margarine. Stir into flour mixture, mixing well.Stir in raisins.
-Bake 40 to 45 minutes, or until toothpick inserted incenter comes out clean. Cool in pan 20 minutes. Transfer to cool, flat surfaceto cool completely.
Note: If you need not avoid wheat, this recipe may be madeby substituting 2 cups flour for oat and rice flours, and omitting the xanthangum.
Snowdrops?M,E,W,P,S,N
½ cup milk-free, soy-free margarine, softened
¼ cup sugar
1 tablespoon water
¼ teaspoon vanilla extract
1/8 teaspoon lemon extract
1¼ cups rice flour
1 teaspoon cornstarch
Confectioners’ sugar
- Preheat oven to 375°F. Grease cookie sheets. Setaside.
- In large bowl, beat margarine with electric mixer onmedium speed until creamy.
- Add sugar; beat well. Stir in water and vanilla and lemonextracts.
- Add flour and cornstarch. Mix well.
- Roll into small balls and drop onto cookie sheets. Bake 6to 7 minutes (cookies will not brown).
-Transfer to wire racks to cool. Sprinkle withconfectioners, sugar or frost.
No-Bake Alaskan Snowballs?M,E,W,P,S,N?1 cup milk-free,soy-free margarine, softened
4 tablespoons water
1 teaspoon vanilla extract
1½ cups sugar
6 tablespoons unsweetened cocoa powder
4 cups quick oats
1 cup sweetened, flaked coconut
Confectioners’ sugar
In large bowl with electric mixer at medium speed, creamtogether margarine, water, and vanilla extract. Beat in sugar and cocoa powder.Stir in oats and coconut; mix well. Form 1-inch balls; roll in Confectioners,sugar. Refrigerate.
