Makes 2 servings
1 cup fresh or frozen blueberries
1 frozen banana
1 cup vanilla soy milk
2 tablespoons chopped fresh mint leaves
1 teaspoon chia seeds (optional)
½ cup ice
Boost it: 2 to 3 tablespoons non-dairy vanilla yogurt
Combine all the ingredients in a blender and blend from low to high until frosty smooth.
