Carrot pineapple zucchini loaf

Yield: 20 slices, one per serving

  • ¼ cup margarine
  • 1 cup granulated sugar
  • 1 egg
  • 1 egg white
  • 2 teaspoons cinnamon
  • 1½ teaspoons vanilla
  • ¼ teaspoon nutmeg
  • ¾ cup grated carrot
  • ¾ cup grated zucchini
  • ½ cup drained crushed pineapple
  • 1/3 cup raisins
  • 1¼ cups all-purpose flour
  • ½ cup whole-wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  1. In a large bowl or food processor, cream margarine with sugar. Add egg, egg white, cinnamon, vanilla and nutmeg; beat well. Stir in carrot, zucchini, pineapple, and raisins, blending until well combined.
  2. Combine all-purpose and whole wheat flours, baking powder and baking soda; add to bowl and mix just until combined. Pour into loaf pan and bake for 35 to 45 minutes, or until tester inserted into center comes out dry.
