Raspberry Brownies

These decadent brownies boast antioxidant-rich blueberries and raspberries. And they're under 100 calories per serving, so you don't have to feel guilty eating one—or two!

Makes: 12 servings

Ingredients

Nonstick cooking spray
¼ cup chocolate chips, semisweet
3 Tbsp butter, unsalted
1 cup "white" whole-wheat flour or whole-wheat pastry flour 
½ cup sugar, granulated
½ cup cocoa, unsweetened
1 tsp baking powder
18 tsp salt
½ cup blueberries, fresh or frozen
2 Tbsp instant coffee granules
1 tsp vanilla extract
1 large egg
1 pint raspberries

Directions

Preheat oven to 350°F. Use a cooking spray to coat the bottom of a 9-inch-square baking pan. Then, place the chocolate chips and butter in a small microwave-safe dish (preferably glass) and microwave on high for 1 minute, or until chocolate is melted. Set aside.

Note: You could also melt the chocolate chips and butter in the oven by placing them in a small oven-safe dish (preferably glass) and warming them 4 to 5 minutes, or until chocolate is melted.

Next, place the flour, sugar, cocoa, baking powder and salt in a large mixing bowl. Whisk until combined. Place blueberries, coffee granules, vanilla extract and ½ cup of water in a blender and mix on high speed until smooth. Make a well in the center of the flour mixture and pour in the blueberry mixture. Then, add the egg, raspberries and melted chocolate and butter.

Using a rubber spatula, gradually stir the flour into the wet ingredients until just combined, about 12 turns. Mixture will resemble a fluffy icing. Transfer the batter to the baking dish and bake 15 to 17 minutes until the top is firm and has puffed. Cool 2 minutes before slicing and serve immediately, or cool completely before storing in an air-tight container and keeping it on the counter for up to 5 days.
